1 stick butter
1 pint heavy cream
About 1/2 cup of grated cheese or two big hand fulls
1 can peas, drained
Pancetta, cubed or cut in small pieces

Directions:
Directions:
Melt one stick of butter in the bottom of a sauce pan. Sauté the pancetta (don't make it too crisp...just enough so its cooked, unless you're into crispy). Add the pint of heavy cream and bring to a medium boil, stirring constantly so it doesn't burn. Start to add grated cheese gradually to thicken sauce. Continue to let the sauce simmer rather than boil and add the can of peas. This sauce must be served immediately and will thicken once it cools down some. Serve with tortellini or fettuccine and Bon Appetito!!

I made this up one night and now it is a regular in the Rosarbo House, although Ronnie Roe doesn't eat it. If Noni Flossie and Mommy will eat it, I did something right because they are a hard crowd to please!
