1/2 C sugar
1/4 C flour
1 t cinnamon
6 Lg tart cooking apples, peeled, cored and sliced (6 C)
2/3 C quick cooking oats
1/4 C brown sugar
3 T flour
1/3 C butter
1 egg yolk, beaten
1 T water

1 pie crust and butterscotch - caramel ice cream topping

In Lg mixing bowl - combine sugar, flour and cinnamon. Add the apples and toss. Turn mixture into unbaked pie crust.

In med bowl, mix oats, brown sugar and 3 T flour. Cut in butter till mixture resembles coarse crumbs. Sprinkle the oat mixture over the apples.

Cut top pastry into strips and lattice over the apples. Be sure to seal ends. Brush lattice with mixture of egg yolk and water. Add foil around edges.

Bake the pie at º375 for 25 minutes. Remove foil and bake for another 25-30 minutes until bubbly.

Remove pie and drizzle with caramel topping. Cool on wire rack or serve warm with ice cream.
