3-4 lb. chuck roast (1 1/2 - 2 inches thick)
1/2 lb. margarine
1 cup flour (approximately)
salt and pepper

Directions:
Remove meat from bone with sharp knife. Save bone for soup. Cut meat in 3-inch squares. Slice each one against the grain into three 1/2-inch thick slices, making about 20-25 pieces. Flour each lightly, one at a time. Score finely with sharp knife, lengthwise and crosswise, approximately half-way through meat on each side. Do not cut clear through. Heat iron skillet over medium heat. Melt 2/3 of the margarine. Flour each piece of meat again, pressing flour into meat with diagonal cuts. Fry quickly on each side until crisp, adding salt and pepper to taste. Keep warm in oven on hot platter unitl all pieces are done. Add margarine as needed for each panful of steaks. Serve at once with baked potato and tossed salad.
