Apple Pie Recipe

Pie Filling:
6 C (2lbs or 8 med) peeled Jonathan Apples
2 T orange juice
1/3 C brown sugar
1/3 C sugar
3 T flour
1 t cinnamon
1/4 t salt
1/4 t nutmeg
2 T butter
1-2 t milk
1 t sugar

Crust:
2 C flour
1 t salt
3/4 C (3/4 stick) Crisco
5 T cold water

Preheat oven to º400

Crust:
Combine flour and salt in med bowl. Cut in Crisco using pastry blender until flour is just blended in to form pea size chunks. Sprinkle water one T at a time. Toss lightly with fork until dough forms a ball. Divide dough into two equal parts. Press between hands to form two pancakes. Flour pancakes lightly on both sides. Roll bottom crust between sheets of waxed paper on countertop. Place bottom crust in dish and make top crust.

Filling:
Toss apples and orange juice in large bowl. Combine brown sugar, sugar, flour , cinnamon, salt and nutmeg. Toss with apples until coated.

Spoon into uncooked pie shell. Dot with butter and moisten edge of pastry with water to seal top crust.

Brush top with milk and sprinkle with sugar.

Cover top with sheet of foil to prevent over browning and edges from burning.

Bake at º400 for 40 minutes. Remove foil and bake another 10-20 minutes or until apple filling istender to knife and bubbly.

Cool prior to serving.
