1 Flank stead or round steak
2-3 cloves garlic
Grated cheese
Italian parsley
Salt pork chopped
Hard-boiled eggs optional
Salami optional
salt and pepper to taste
Olive oil

Directions:
Directions:
Pound flank stead or round steak until flat. Chop garlic, salt pork and parsley. Add grated cheese, salt and pepper to taste. Spread mixture onto steak. Roll and secure with toothpicks or string. Pan fry in olive oil until brown. Add to sauce 30 minutes before serving. A variation to this is to place the optional hard boiled egg and salami on top of mixture prior to rolling.

This recipe comes from watching my Grandmother make it so there are no exact measurements. Most Italians from our part of Italy only use the grated cheese, garlic, parsley, salt pork, salt and pepper.
