2 egg yolks
pinch of salt
juice from one fresh lemon
2 c oil (corn, peanut or olive)

tarragon

Slowly mix the egg, egg yolks, salt and the optional spice(s) for about fifteen seconds. Continue mixing as you slowly add the oil. After adding oil, continue mixing for a couple of minutes. Use and refrigerate.
