Ingredients: 12oz. wagon wheel, bowtie, or other specialty-shaped pasta 6 small green onions 1 - 15-1/2oz. can red kidney beans, rinsed and drained 2 large stalks celery, thinly sliced (about 1 cup) 1 medium red sweet pepper, seeded and cut into 1/2 inch cubes
Dressing: 1/2 cup mayonnaise or salad dressing 1/2 cup buttermilk 1 T. cider vinegar 1 T. snipped parsley 1 T. snipped green onions with tops 1 small clove garlic, crushed 1 tsp. Dijon-style mustard 1/2 tsp. onion powder 1/4 tsp. salt

Directions:Cook pasta according to package directions. Meanwhile, prepare the dressing by placing the mayonnaise and butermilk in a plastic container with a tight-fitting lid. Cover and shake until smooth. Add remaining dressing ingredients. Cover and shake until well combined.
Drain the cooked pasta in a large colander and rinse under cold water until cool; set aside. Using kitchen scissors, snip off the root ends from the green onions and about 2" of the green tops; leave some of the green tops attached. Snip trimmed onions crosswise into thin slices. In a large bowl, gently toss together the cooked pasta, kidney beans, celery, red pepper, and green onions. Pour on dressing and toss until pasta is well coated. |
