2 C. mayo
1/2 C. parsley
1/2 small onion, chopped
1 small clove garlic
1 T. lemon juice
1/4 tsp. pepper
1 10 oz. package frozen spinach, thawed, drained on paper towels.

Directions:

Thaw spinach -- wring it out between paper towels. In covered blender or food processor, blend all ingredients until finely chopped. Cover, refrigerate at least 4 hours. Makes 2-3/4 Cups.

This recipe was in a paper insert in November of 1980 and has been extremely popular ever since. Be sure you get the ingredients finely chopped. I once had it at a party and the spinach was not chopped and it was unpleasant.
