2 lbs of beef (cut in small suqares)
4 cups of water
salt to taste
2 tbsp of recaito (chopped onion, garlic and pepper mixed)
1/4 tsp pepper
1/4 tsp oregano
1 envelope of hispanic seasoning (sazon Goya or other brand) with coriander
2 tbsp of spanish red pepper chopped
2 tbsp spanish olives (without juice)
1/2 can of tomato sauce
1 leaf of bailey
1 large potato or 2 medium ones cut in quarters

2 lbs carne de res (picada en cuadritos pequeños)
4 tazas de agua
sal a gusto
2 cucharadas de recaito (cebolla, ajo y pimiento machacado)
1/4 cucharadita de pimienta molida
1/4 cucharadita de oregano
1 sobre de sazon con achiote
2 cucharadas de pimiento morron o medio pimiento
2 cucharadas de aceitunas (sin jugo)
1/2 lata de salsa
1 hoja de laurel
1 papa grande o dos medianas picadas en cuartos

Directions:
Bring the beef to a boil in 4 cups of water with salt to taste at medium-high heat for about an hour (or more time if needed until meat is tender without letting the water dry). Add recaito, pepper, oregano, seasoning, red pepper, olives, sauce, bailey leaf and potatoes and cook covered for half an hour.
Optional: 2 tbs of cooking wine or lemon juice or 4 whole cloves for added taste.

Ponga a hervir la carne en 4 tazas de agua con sal a gusto por alrededor de una hora a fuego mediano-alto (o mas tiempo hasta que la carne ablande sin que se seque el agua). Añadir el recaito, pimienta, oregano, sazon, pimiento morron, aceitunas, salsa, hoja de laurel y pedazos de papa y cocinar a fuego mediano por alrededor de media hora cubriendo la olla.
Opcional: puede añadir 2 cucharadas de vino de cocinar o una cucharada de zumo limon o 4 clavos de especia para mas sabor criollo.

You can marinate the meat with adobo in advance, just make sure you reduce the amount of salt in the water. Serve with rice and beans - this is a staple dish of caribbean cuisine. Shred the beef to stuff venezuelan arepas!

Se puede adobar la carne de antemano pero debe reducir la sal al hervir la carne. Sirva con arroz blanco y habichuelas, este es un plato tradicional de la cocina caribeña. Desmenuze la carne para rellenar las arepas venezolanas.
