1 T olive oil
6 medium yellow peppers
1 med potato peeled & cubed
6 cups chicken broth
1 bay leaf
1/4 tsp pepper
1 T butter
1 large onion diced
1 garlic clove minced
1/2 tsp salt
1 cup buttermilk

Directions:
Directions:
Heat oil & butter in Dutch oven, Saute peppers, onions, potatoes & garlic until tender. Add broth, bay leaf & salt, bring to boil. Reduce heat for 20 min, discard bay leaf. Puree in blender, return to pan, stir in buttermilk & heat. Serve hot, topped with spoon of sour cream & chives. Optional
