2 lbs. sweet potatoes or yams (fresh or canned)
1/2 C. brown sugar (packed)
1 C. orange juice
1 T. cornstarch
1 tsp. salt
grated orange peel
3 T. butter
3 T. heavy cream or evaporated milk
1/2 to 1 C. broken pecan halves
Minature marshmallows

If using fresh yams or sweet potatoes, cook in water until tender and drain. Peel and cut in quarters and place in greased casserole dish. Set aside. In small saucepan, mix brown sugar, cornstarch, and salt, stir in orange juice and milk and cook over medium heat, stirring constantly until thickened. Remove from heat. Add butter and stir until melted. Add orange rind and pecans and pour over yams in casserole dish. Bake at 350 for about 30 mins., add handful or two of mini marshmallows and bake an additional 8 - 10 minutes, or until marshmallows have browned (or place under broiler for a minute or two to brown marshmallows.)

I invented this recipe from a mistake! One year I was making Thanksgiving dinner and started using one recipe out of a cookbook. After I had started cooking some ingredients, I realized I had inadvertently added orange juice and orange rind from the recipe above the one I was actually using. It ended up being a big hit and is now my regular sweet potato recipe.
