1/3 c. butter
2/3 c. all-purpose flour
3/4 tsp. salt
1/8 tsp. dry mustard
1/8 tsp. cayenne pepper
2 2/3 c. milk
1 1/4 tsp. Worcestershire sauce
2 2/3 c. shredded sharp Cheddar cheese

In a 2 quart saucepan over low heat, melt the butter. Stir in and blend the flour, salt, mustard and papper. Stir in the milk and Worchestershire sauce. Continue stirring the mixture ofr 10 minutes, or until thickened. Stirring continuously, melt the cheese into the mixture and blend well.

This sauce tastes great with a bunch of different things! Bake with sliced potatoes or macaroni for great au gratin potatoes or mac & cheese. Or use a sauce for a great Guinness burger - see recipe in cookbook.
