1 med onion- chopped
1 T oil
3 clove garlic
2 sweet potatoes peeled and cut into 1/4" slices.
1 baking potatoes peeled and cut into 1/4" slices
1/2 c flour
1 t salt
1/4 pepper
2 c shredded Gruyère cheese (divided)
1 3/4 c Half and Half
2 T butter

Directions:
Directions:
Sauté onion and garlic in oil.
In a large mixing bowl, add flour salt and pepper, add potatoes and toss to coat well.

Arrange half of the Potato mixture in a greased 9 x 13 baking dish. Top with onion and 1 c of cheese. Repeat.

Pour half and half over potato mixture. Dot with butter and cover with aluminum foil.

Bake 400º for 50 min. Uncover, top with remaining 1 c cheese and bake 20 min more until cheese is brown and potatoes are tender.
