1 c. light or dark molasses
1/2 c. boiling water
5 T. margarine
1/2 tsp. salt substitute
2 tsp. ground ginger
1 tsp. baking soda
2 c. all-purpose flour

Directions:
Directions:
Preheat oven to 375ºF. Mix molasses, boiling water and margarine. Add salt, ginger, and soda - stir lightly. Add flour and mix until all of the dry ingredients have been absorbed. Pour into an un-greased 9"x9"x2" pan. Bake for 30 minutes. Test for doneness of the gingerbread. It is done when the top springs back after being lightly touched and the bread should be pulling away from the sides of the pan.

Gingerbread may be served hot, cooled for 10 minutes, or cooled completely prior to taking the gingerbread from the pan. Cut into squares and serve.
