2 cups torn spinach
1 - 11oz. can drained mandarin oranges
1/2 cup red onion rings
6oz. feta cheese, cubed
1/2 cup pitted black olives, sliced

Dressing:
2 T. extra virgin olive oil
2 T. fresh lemon juice
Celtic salt and pepper to taste

Directions:
Directions:
Place spinach, oranges, onion, cheese, and olives in a large bowl and toss to combine. Combine dressing ingredients in a small bowl and whisk well. Add to salad. Toss and serve.
