2 c. toasted coarsely chopped walnuts (be sure nuts are toasted). 1 1/2 sticks softened butter, 2 c. sugar, 3 eggs, 1 tsp. vanilla, 3 T. cinnamon.

3 tsp. baking powder, 1 tsp. baking soda, 1 tsp. salt, 4 c. flour.

Beat butter, sugar, vanilla and cinnamon. Add eggs, beat a bit, and add nuts. Add dry ingredients. Don't mix too much.

Divide in thirds. Make 3 logs about 1 1/2 inch high. If you flour your hands and counter, it will be easier. Make the end square.

Put on ungreased cookie sheet. They will flatten, so don't put them too close. Bake about 30 minutes at 350 degrees. Cool for about 10 minutes then slice on diagonal. Don't make too thin or they will break apart easily.

Bake in two batches on cookie sheet. After 12 minutes, turn over and bake other side for about 10 minutes. They should be lightly browned so check often. The size of the biscotti will determine how long to bake. Put on wire rack until cool.

They can be quite tricky, so, if your first batch doesn't work out, try again. I tested the amount of this for you. Oh, what will I do with all the biscotti. . .probably eat it all by myself. It is my favorite.
