Ingredients: 2 cans Progresso Lentil Soup, 2-3 cloves of garlic, 1 medium onion, 2-3 T. of olive oil, bunch of Italian parsley, 1 lb. of pasta (your choice), salt

Directions:While salted water is boiling for the pasta, chop up the garlic and onion. Also chop a big handful of parsley and keep it separate. After adding the pasta to the water and boiling for 5-8 minutes, drain the pasta and hold aside. Put the same pot back on the stove, and heat olive oil, and then add onions and garlic. Saute for 3-5 minutes, and add the two cans of lentil soup. When the soup is heated, add the drained pasta and reheat in the sauce. Top with the chopped parsley and serve. Add a salad and some Italian bread and wine, and there you have it: A quick souper supper! |

Notes: This is a great quick supper in one pot. A friend & fellow teacher, Joe Coyle*, gave it to me. Now what does an Irishman know about cooking pasta? Try the dish and you'll see his folks must have come to America by way of Naples...and remember it has that Irish touch...it IS "canned" soup! *Aunt Margie said she remembered Joe's father, Dr. Coyle, and she thought of the family as the Staten Island Kennedys.
