6 cups ripe peeled figs
3 cups sugar
2 boxes strawberry gelatin (regular)

Directions:
Directions:
Mix figs, sugar and gelatin in large pot. Cook very slowly, stirring continously to prevent sticking until thickened. (About 40 minutes) Figs will taste like strawberry preserves when cooked.

Living in fig country, this is a great recipe. Great served on toast. Even better on vanilla ice cream!

For sweeter recipe, use 6 cups sugar and 4 boxes of strawberry gelatin.
