1 C cooked brown rice
1 C fat free milk
Pinch salt
1 ripe banana, mashed
1 tsp. vanilla extract
1/4 tsp. cinnamon
1/8 tsp. almond extract

Directions:
Directions:
Combine the rice, milk, and salt in a medium saucepan; bring to a boil. Reduce the heat and simmer uncovered, stirring occasionally, until slightly thickened, about 15 minutes. Let the mixture cool to room temperature about 30 minutes. Stir in the banana, vanilla, cinnamon, and almond extract.

This pudding is best served at room temperature. If you wish to refrigerate it, do so for no longer than 1 day and cover the curface directly with plastic wrap to prevent discoloration of the banana.
