Mexican Rice Recipe

4 T. olive oil (may use up to ¼ cup)
1/2 c. onion, chopped fine
1 garlic clove, minced
2 c. long grain white rice
4 c. chicken stock
1 (4 oz.) can of tomato sauce
Add salt to taste (1 tsp.)

Directions:
In a separate sauce pan bring stock to simmer, while in a large skillet brown rice in olive oil on medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, for about 4 minutes or until onions are softened, then add can of tomato sauce and salt and stir well for about 1 minute. Add broth to mixture, cover and lower heat for 15 to 20 minutes until broth is consumed, turn off heat and let sit for 5 minutes, then serve.

If desired, you can also add 1 cup of shrimp, and/or vegetables such as small chopped potatoes, ½ can of corn or ½ can of mixed vegetables. You must add another cup of chicken stock if you choose to add any of these.
