Ingredients:  
1 cup Jasmine Rice
1 1/2 cups chicken broth
1/4 cup chopped green onions
2 fresh red chilies, seeded and chopped
1 Tbs chopped cilantro
1 Tbs margarine
1 tsp minced ginger root
1/8 tsp turmeric
2 Tbs lime juice
1/4 cup roasted peanuts

Directions:
Directions:
In a medium saucepan, combine rice, chicken broth, green onions, chilies, cilantro, margarine, ginger root, and turmeric. Bring to a gentle boil. Cover. Reduce heat to simmer, simmer 15 minutes. Fold in lime juice and peanuts. Serve immediately. Serves 6
