2 12 oz. pkgs. frozen hot pork sausage (e.g. Jimmy Dean), thawed
1 2 lb. pkg frozen southern-style hash brown potatoes
2 8 oz. pkgs shredded colby-jack cheese (4 cups), divided
1 med. onion, minced
2 c. milk
1/2 tsp. salt
6 eggs, beaten

Directions:
Directions:
Brown sausage in medium skillet. Drain. In a large bowl, combine sausage, hash browns, 3 cups cheese, onion, milk, salt and eggs. Pour mixture into greased 9 x 13 baking dish. Top with remaining cheese. Refrigerate, covered, several hours or overnight. Bake, uncovered, in a preheated 350º oven until knife inserted in center comes out clean (50-55 minutes). Let stand 10 minutes, covered. Cut into squares. Serve with your favorite salsa.

A meat and potato lover's delight! I reduce the milk by 1/2 cup for a little drier casserole.
