1/4 cup salad oil
1 cup Converted white rice
2 cups chicken broth
1 tsp ground cumin
1/4 tsp garlic powder
1/2 tsp each: chili powder and salt
1/4 tsp black pepper
1/4 cup each diced bell pepper, diced celery and diced onion
1 cup crushed tomatoes (fresh or canned)

Directions:
Directions:
Combine oil and rice in a heavy pot, brown rice over medium heat, stirring frequently to prevent burning. Add chicken broth and cook covered until half done, about 20 minutes. Reduce heat to low. Add cumin, garlic and chili powder, salt and pepper, diced vegetables and tomatoes: cook until vegetables are tender.
