1 c. kosher salt
1 c. dark brown sugar
1 tbsp. peppercorns
5 whole cloves
1 onion, quartered
2 carrots, cut into 2” pieces
2 oranges, cut and squeeze out juice, then drop into brine
1 lemon, cut and squeeze out juice, then drop into brine
1 gallon water

Place water and ingredients in a large pot and bring to a boil. Remove from heat and allow to completely cool. Line a 5 gallon pail with 2 heavy duty garbage bags, doubled. Add the cleaned turkey, breast side down. Pour the brining liquid over the turkey. Tightly close the garbage bags, trying to push most of the air out. Place in refrigerator and allow to brine for 24 hours.

Before cooking remove turkey from brine and rinse well in cold, inside and out. Pat dry and rub inside and out with softened unsalted butter. Be careful of adding salt, the turkey has already soaked in it for 24 hours. Fill cavity with stuffing or celery, onions, carrots, apples, oranges halved, etc…. Be creative! Bake!

This is a must for super moist and tender turkey!!
Works well for chicken (4 -6 hrs), fish (20 min.), shrimp (20 min.), etc.
