1 lb. ground beef
1 can Ro-Tel
1 bell pepper chopped
1/2 onion, or more if you prefer
1 Tbs. chopped garlic
3/4 tsp. cumin
4 eggs
1 C. shredded cheddar cheese

Directions:
Directions:
Heat large iron skillet and brown the ground beef. Drain off fat. Add pepper, onion and garlic. Cook until the onions are soft. Add Rotel and cumin. Cook for 2 1/2 minutes, covered. In the mixture, make 4 small pools and add 1 egg to each pool. Cook for 5 min. covered or until eggs are poached well. Add cheddar cheese to the top, cover and cook 1 min. until cheese is melted.
