3 C grated carrots
2 C flour
1 t baking powder
2 t baking soda
1/2 t salt
2 C sugar
1 t cinnamon
4 eggs, well beaten
1 1/4 C vegetable oil
1 t vanilla

Cream cheese frosting:
1 (8 oz) pkg. cream cheese, softened
1/2 C butter, softened
1 (16 oz) pkg. powdered sugar, sifted
1 t vanilla

Directions:
Directions:
Combine first 7 ingredients; stir in eggs, oil and vanilla, mixing well. Pour batter into 3 greased and floured 9" round cakepans. Bake at 350º for 30 min. or until knife comes out clean. Cool in pans 10 min.; remove from pans and let cool completely on wire racks. Spread Cream Cheese Frosting between layers and on top of cake.

Cream cheese frosting:
Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla; beat until light and fluffy. Makes about 3 cups.
