2 c (9 oz) thinly sliced pieces of cauliflower (or substitute vegetables of your choice -- cooked peas, carrots, green beans, broccoli or chopped spinach)
1/3 c chopped small onion
1/2 c chopped small green pepper
1 c shredded cheese
1 c milk
1/2 c biscuit baking mix
3 eggs
1/2 tsp salt
1/3 tsp pepper
Optional -- diced cooked ham, chicken, turkey or other meats

Directions:
Directions:
In covered saucepan in enough boiling salted water to cover, cook cauliflower or other vegetables. Drain; place in greased 9-inch pie plate. Sprinkle with onion, green pepper and cheese. Place remaining ingredients in blender (or use electric mixer). Whirl 15 seconds (or beat one minute with beater). Pour into pie plate.
Bake in preheated 375-degree for 20 to 25 minutes or until knife inserted in center comes out clean and top is golden. Let stand five minutes before serving.
(NOTE: One package (9 oz) of frozen cauliflower, thawed and drained, may be substituted for fresh.)
