1 1/2 cups sifted flour
2 tsp. baking powder
3/4 tsp. salt
1 cup milk
1 egg, beaten
1 cup finely chopped zucchini
Cheese Sauce:
2 tbsp. butter or margarine
2 tbsp. flour
1/4 tsp. salt
dash of pepper
1 1/4 cups milk
1/2 cup shredded sharp process American cheese
1/2 cup shredded process Swiss cheese

Mix together flour, baking powder and salt. Combine milk, egg and zucchini; add to dry ingredients and mix just until moistened. Drop from tablespoon into deep hot fat (375). Fry a few at a time for 3 to 4 minutes. Drain. Makes 24 fritters. For crisp fritters, cook a few at a time at the correct temperature. Use the thermostatic control on an electric deep fryer to keep the temperature constant or use a heavy saucepan and a deep frying thermometer.
For cheese sauce: Melt butter or margarine. Blend in flour, salt and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Add cheeses; stir until melted.
