3 c. cooked chicken (boned and diced)
1 1/4 c. rice
3 T. bacon fat
3 medium carrots (diced)
2 stalks celery (diced)
3 T. onion (diced)
1/2 c. frozen peas
1 tsp. curry powder

Directions:
Directions:
Boil the vegetables until almost tender. Salt to taste. In heavy saucepan heat bacon fat. Add rice and stir for 2 or 3 minutes. (Do not let rice begin to brown.) Add 2 1/2 c. boiling water or chicken broth. Add salt and curry. When rice is tender add cooked vegetables and diced chicken. Pour into baking dish and bake 15 - 20 minutes. If rice seems dry, add more liquid before baking. More curry may be used, if desired.
