1 14 oz can whole tomatoes
1 cucumber
½ green pepper
1 medium onion
1 clove garlic
sprig parsley
1 large bottle Wishbone Italian dressing
2 c tomato juice
salt and pepper to taste
garnish:
sour cream
croutons

Directions:
Directions:
Drain juice from can of tomatoes into a large bowl. Squeeze juice from tomatoes and then coarsely chop them and add to juice. Peel cucumber and slice horizontally. Scoop seeds with a spoon and discard. Dice cucumber and add to bowl. Dice the pepper and onion add to mix. Garlic and parsley should be finely chopped before being added. Add dressing and juice. Let mixture sit in refrigerator for at least two hours before serving. Add a dollop of sour cream and a few croutons for a great summer meal.
