4 T. butter
4 c. onion, chopped (2 large)
2-3 garlic cloves, minced
1/4 c. GF flour blend
1/4 tsp. grated nutmeg
1 c. heavy cream
2 c. milk
3 lbs. (5 - 10 oz. pkg.) frozen chopped spinach, defrosted and squeezed out
1/2 c. parmasan cheese + 1/2 c. for topping
1 T. kosher salt
1/2 tsp. fresh black pepper
1/2 c. romano cheese, grated

Melt butter in sauce pan. Add onions and saute until translucent but not brown. About 15 minutes. Just before they are translucent, add garlic and finish sauteing, about 2-3 minutes more. Add flour and nutmeg. Stir until all butter is soaked up and cook for 2-3 minutes. Add cream and milk and cook until thickened over med-low to medium heat and bring to an easy boil. Add spinach and 1/2 c. parmasan cheese to milk mixture. Stir to mix. Season with salt and pepper.
Transfer to a baking dish and sprinkle with 1/2 c. parmasan and romano cheese on top.
Bake at 375º for about 20 minutes until hot and bubbly.

The Seitz family tried this for Christmas dinner 2006 and we all liked it. This is very easy to make and can be made ahead of time and refrigerated. It can also be frozen for later serving.
