1 cup sifted flour (self-rising)
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
1 cup cornmeal (self-rising)
2 eggs
2 cups milk (regular kind)
1/4 cup oil

Directions:
Directions:
Preheat oven to 425.

Put oil in a cast iron skillet and place in oven.

Sift together flour, sugar, baking powder and salt. Stir in the cornmeal. Add eggs and milk. Stir to mix (don't overdo).

Take heated skillet and pour the hot oil into the batter mixture to mix. Pour batter into the skillet and bake 20 to 25 minutes.
