2 pounds new red potatoes, washed and halved
1 bay leaf
1 tablespoon grated horseradish (or prepared)
1 cup sour cream
1/4 cup chives, chopped
Kosher salt (to taste)
freshly ground black pepper (to taste)
1 tablespoon olive oil

Directions:
Directions:
Preheat oven to 400.
Wash and boil potatoes in salty water with bay leaf until fork tender. Drain potatoes and coarse mash along with horseradish, sour cream, and chives. Season with salt and pepper.
On stove top, heat oven proof 10-inch skillet with 1 tablespoon olive oil until beginning to smoke. Add potato mixture to skillet and bake until golden and crispy about 30 minutes. To serve, invert onto a plate and cut into pieces.
