4 Chicken Breasts 1 T Chopped Vidalia onions 1 t lemon juice 1 egg 1/2 cup breadcrumbs 1/4 cup flour 1 t chopped garlic 3 T olive oil 4 T unsalted butter lemon for garnish
Directions:
Marinate chicken breasts with onions and lemon juice for an hour. Dip the chicken into flour, then egg, then breadcrumbs.
Heat the pan with olive oil on medium heat then add the chicken and fry for about 3 minutes per side or until cooked through.
In a separate small pan, put the unsalted butter and garlic. stir frequently or until the garlic is light brown. Spoon over chicken.
Garnish with lemon slices.
