Ingredients:

1 # Boneless beef sirloin
1/4 cup soy sauce
3/4 cup water
2 Tbsp cornstarch
2 Tbsp cooking oil
1 large onion cut in slivers
1 green pepper sliced
2 ribs celery cut in 1" diagonally pieces
2 tomatoes cut into wedges.
Cooked rice

Directions:

1. Slice meat across grain in thin strips. Set aside. For sauce combine soy sauce, water, and cornstarch.
2. Heat 1 Tbls of oil in large skillet or wok. over high heat. Stir fry half of heat, remove and repeat with remaining meat adding oil as needed.. Remove meat and keep warm. Add 1 Tbls oil and saute onions, peppers, and celery.until crisp tender. Return meat to pan. Stir the sauce add to pan. Cook until thickened and bubbly. Cook and stir 2 minutes more. Add tomatoes, cook just until heated through. Serve over rice.
