2 c. flour, 1 Tbl. baking powder, 1/4 c. butter, 1 c. milk, 3 Tbl. sugar, 1/2 tsp. salt, 1 egg, 1/2 c. cherry preserves(any flavor will do)

Directions:
Directions:
Sift together flour, sugar, baking powder, and salt. Cut in butter until it resembles coarse meal. Form a well center. Beat together egg and milk, pour into well, stir until just moistened. Fill muffin cups 1/3 full. Carefully put 2 tsp. preserves on batter, cover with additional batter. Bake at 425 for 20 min.
