4 cloves garlic minced
1 onion diced
1 lb. white cannellini beans cooked
2 1/2 qt. chicken broth
1/2 lb. smoked ham cubed
1 ham bone or hock
6 small white potatos diced
1 bunch Collard Greens diced
4 chorizos (Spanish Sausage) or summer sausage
salt if needed and pepper
2 heaping T. Goya jarred Sofrito

Directions:
Directions:
Soak the beans over night, or used canned beans. In a pot, saute onion and garlic. Add broth, pork and ham bone, boil and skim excess fat if any. Add potatos, beans and greens, cook until done, add chorizos and season with Sofrito, salt and pepper. Continue to cook on a low simmer until potatos are done.

Caldo means cauldron or soup pot. Gallego means "from Galicia", which is a region in Spain. Caldo Gallego is a traditional Spanish soup, with many variations. It's typically brothy with diced meat, vegetables and greens. Serve with hot crusty bread.
