6 Tbsp salad oil
5 to 6 chicken pieces
1 c onion, minced
¾ c green pepper, minced
4 cloves garlic, minced
1 (29oz) can tomato
1 (8oz) tomato sauce
½ c Chianti wine
3 ¾ tsp salt optional
½ tsp pepper
½ tsp allspice
2 bay leaves
½ tsp dried thyme
dash cayenne pepper

Directions:
Directions:
Heat oil over medium high heat. Sauté chicken until golden on all sides. Add onions, green pepper and garlic; brown lightly. Add remaining ingredients and simmer, uncovered, 30 to 40 minutes, or until chicken is fork tender. Serve over hot, cooked rice.
