1 can tomatoes, 1 can beans (any kind), 2 carrots chopped, 1 onion chopped, 1 large leek chopped, 1 clove garlic, 1 cup corn kernels, chilli to taste (I use about 1/4 tsp), 1 stock cube

Directions:
Directions:
Add onion and leek to a large pot and soften in some oil. Add garlic and fry for a minute or two, then add chilli for another minute. Add the can of tomatoes, the beans with their juice and a stock cube. Add the carrots and cook until tender. Add the corn. You can also add spinach or any other vegetable you fancy. You might need to add water to make the soup more liquid.
