3 cups tart-type apples(Macintosh, gala, etc.) peeled and
diced,
3 cups flour
2 eggs,
2 cups sugar
1 1/2 cup vegetable oil
1 t. vanilla
1 t. baking soda
1/2 t. salt
1 t. cinnamon
1 cup chopped walnuts or pecans
powdered sugar to dust top at end of baking

Directions:
Directions:
Dredge apples and nuts thoroughly with 1 cup of the flour. Beat eggs and sugar together then add oil, vanilla, dry ingredients and mix together. Next add and mix in the apples +nuts mixture. Batter will be thick. Bake in buttered bundt pan, or two loaf pans or a 9 x 13 baking pan for about 1 hour and 375. When done, can dust with powdered sugar while warm.
