200 g stoneless dates,finely chopped
1 level tsp bicarbonate of soda
250 ml boiling water, better still, - half water,half brandy
100g soft butter
200g soft brown sugar
2 eggs, beaten
150g self raising flour
100g finely chopped walnuts or pecans
100g glace cherries, or dried fruit, chopped

For the syrup
200g soft brown sugar
125 ml cold water
125 ml cooking brandy

































Directions:
Directions:
Preheat oven to 180.
Place the prepared dates in a jug and add the bicarbonate soda and the boiling water, (or half water, half brandy).
Cream the butter and sugar in a bowl, and little by little, add the beaten eggs.
Fold in the self-raising flour, nuts and cherries, or fruit.
Stir in the sloppy dates, then turn into a buttered oven proof dish or tin.
Bake for 45 - 60 minutes, but test before removing by inserting skewer. Needs to come out clean.
Meanwhile, in a saucepan, bring together the syrup ingredients over a low heat. When the pudding is cooked, pour the syrup over it and leave covered until cold.

Possible to buy dates around festive times, otherwise can use raisins but not so rich.
Same with glace cherries, but can substitute with dried mango or pawpaw.
Rich, so don't cut slices too large!
