4 small or 2 large potatoes
washed, peeled and sliced
2 Tbsp water
2 tsp canola oil
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
Place potato slices in a microwave safe dish, sprinkle with water; cover and cook on high for 8 minutes. Remove cover. Heat oil in a large skillet over medium heat. Spoon steamed potatoes into skillet. Brown the potatoes 5 to 7 minutes. Season with salt/pepper. 1-3/4 cups each (Heart Healthy and 78 calories per serving)
