2 C. drained yellow squash
2 medium carrots grated
1 small jar diced pimiento
1 medium onion chopped
1 C. sour cream
1 package Pepperidge Farm cornbread stuffing

Directions:
Directions:
In casserole dish, melt one stick of butter and mix with stuffing. Take out about 3/4 C. from top. Line bottom of casserole well with remainder. Add squash mixture. Place remaining crumbs on top. Bake at 350 for 30 minutes.
