1 lb penne pasta
2 Tbsp butter
1 c sliced mushrooms
4 oz prosciutto, chopped
1 tsp garlic, minced
1/2 c mar sala wine
3 c heavy cream
1 c parmesan cheese
4 boneless chicken breasts, skinned (if you add the chicken to this pasta dish to make it a whole meal.

Cook the chicken before making the sauce and set it aside and add the pasta and the chicken to the sauce as the same time). In a large pot bring water to a boil and cook pasta according to package directions. I prefer antonine's penne rig ate pasta. Drain pasta well and set aside. In a large skillet melt butter over moderately high heat and sauté mushrooms and prosciutto, stirring 4 minutes. Stir in garlic and cook, stirring 4 more minutes, or until mushroom juice reduce. Add mars ala wine and cook for an additional 5 minutes. When wine reduce by about half add cream, stirring until it being to boil add the already cooked pasta. Cook until pasta is heated through. Stir in parmesan cheese and salt and pepper to taste. Garnish: with fresh parsley if desired. To make a complete meal. Take the 4 chicken breast and cut into strips or cubes. In the large skillet add 1-Tbsp olive oil and 1 Tbsp butter and sauté for about 5 minutes or until brown on all sides. Remove from pan and follow the above directions. Add chicken back at the same time you add the pasta to the skillet. This is very good!
