one 9 inch pie crust...
1 1/2 cups sugar
1/2 cup cornstarch
1/4 teaspoon salt
2 1/2 cups water
4 eggs, separated
3 tablespoon butter
1 tablespoon grated lemon rind
1/2 cup fresh lemon juice
1/4 teaspoon cream tartar
1/2 cup of sugar , for meringue

bake pie crust at 450 oven for 5 minutes,,, cool
combine 1 1/2 cups sugar , cornstarch anc salt. cook over medium heat mix well with wooden spoon cook one minute after mixture bubbles..
beat egg yolks in small bowl.. blend 1/2 cup of hot mixture ,, stir and add to hot mixture cook on low heat for 2 minutes (do not overcook) remove from heat stir in lemon juice and butter,, pour into cooled pie shell cover with plastic wrap and refirgerate for 4 hours... beat egg whites with cream of tartar until foamy white,, gradually add 1/2 cup sugar beating until stiff place on greased and floured cookie sheet in peaks, (7 or 8) bake 350 for 15 minutes... cool... place on chilled pie..
