5 lb cross rib or sirloin tip roast. Salt and pepper. Be sure roast is at room temperature; this is very important! Let it stand in kitchen at least 30 minutes. Preheat oven to 375 degrees. Place roast in a shallow pan-open, and roast for one hour. Then turn off the oven for one hour. Do not peek! Roast will be pink and juicy.
