3 fresh jalapeno chili peppers
2/3 c. dry red wine
2 large garlic cloves
1 tsp. salt
1/3 c. olive oil
1/2 tsp. ground pepper
handful fresh parsley
3-4 lb. chateaubriand, room temp.

Directions:
Directions:
Halve peppers and remove stems, seeds, and ribs. In a food processor combine jalapeno, wine, olive oil, garlic, parsley, salt and pepper. Process until smooth. Score surface of steak approx. 1/8" deep and 2 " apart. Place in bag and pour in marinade. Press out the air and seal tightly. Massage bag to distribute. Refrigerate at least 6 hours-turning and massaging bag occassionally.

Prepare low fire grill. Position grill 4-6" from flame. Remove steak from bag and pat dry. Grill 5 minutes per side or until juices well up on surface for medium rare. Remove and let rest 10 minutes. Slice thin on diagonal and across the grain.
