Wash and dice: 1 c. green pepper 1 c. red pepper 1 c. green onion Drain and rinse: 1 can pinto beans 1 can white shoepeg corn 1 can blackeyed peas 1 small jar chopped green chiles or jalepenos 1 small jar pimentos Dressing
1 c. vegetable oil 1/2 c. cider vinegar 1/2 c. sugar
Combine all the ingredients except dessing items. Dressing Boil ingredients Cool and pour over vegetables. Chill overnight. Drain for atleast one hour. Serve with Fritos scoops.
