6 cups fresh or frozen fruit (blueberries, cherries, peaches, applies, apricots)
1/2 to 1/3 cup all purpose flour
1/2 cup sugar
1 1/2 tablespoons lemon rind
1 pie pastry

Directions:
Directions:
preheat oven to 425 F
In a small bowl, combine fruit, flour, sugar and lemon rind. Stir to mix well. Pour into a 9 inch deep dish pie plate. Place piecrust over fruit and pinch around plate edge to seal. Cut slits in crust and bake for approximately 50 minutes.
