3 cups zucchini grated 1 small onion chopped fine 3-4 slices bacon cooked-crumbed 1 c grated cheddar cheese 1 c self-rising flour 1/4 to 1/2 c half and half or milk 5 large eggs 1 tsp salt 1/2 tsp pepper
In bowl combine, squash, onion and bacon. Stir in cheddar cheese and flour. Beat eggs, 1/2 and 1/2, salt and pepper together and pour over squash. Mix well and pout in 9 x 9 square baking dish, (butter baking dish before adding squash mixture). Bake in preheated 350 degrees oven for 40–50 minutes or until golden brown.
